Zucchini Pie

This Zucchini Pie is a family favorite! My mom used to make this for my son and he thought it was apple, and we kind of didn't tell him otherwise, haha. This is a perfect way to use up zucchini if you have a garden with an abundance.

Zucchini Pie


4 to 6 cups zucchini cut into thin slices (cooked until tender and then drained).

2 tsp lemon juice

1 cup sugar

pinch of salt

1 1/2 tsp cinnamon

1 1/2 tsp cream of tarter

1/4 tsp nutmeg

4 Tbsp flour

Mix sugar, salt, spices, flour, and cream of tarter and pour over cooked zucchini until well coated. Pour mixture into a 9" deep pie crust. Topping 1/4 cup brown sugar 1/2 cup flour 4 Tbsp butter Mix and crumble on top. Bake at 350 degrees for 1 hour or until topping is golden brown.
