Cowboy Cornbread Casserole


1 pound ground beef

1 packet of taco seasoning (or 1/2 tsp of garlic powder, onion powder, cumin, chili powder, paprika)

2 boxes of Jiffy Cornbread Mix

2/3 cup milk

2 eggs

1 cup frozen corn

1 can diced tomatoes with green chilies

1 can pinto beans, drained

1 cup shredded cheddar cheese

salt and pepper to taste


In a large skillet brown ground beef. Add taco seasoning, salt, pepper, corn, pinto beans, and tomatoes with green chilies. In a separate bowl combine cornbread mix, milk, and eggs. Pour cornbread mix into ground beef mixture and stir until everything is combined. Pour mixture into a greased 9x13 baking dish. Sprinkle cheese over top. Cover and bake in a 400 degree oven for 40 to 45 minutes until center is cooked through.
