I love to use my slow cooker and I love chili! This White Chicken Chili is not only healthy, low calorie, but delicious. It is so easy to make, you simply dump the ingredients into a slow cooker, cover, and cook for around 6 hours.
White Chicken Chili
Ingredients
2 to 2 1/2 pounds of boneless skinless chicken breast
3 15 oz cans of white beans (I use navy and cannellini)
1 small onion diced
15 oz can of Rotel diced tomatoes and green chilies
6 oz can of fire roasted green chilies
32 oz container of low sodium chicken broth
4 oz reduced fat cream cheese (optional)
15 oz can of sweet corn (I use 1 1/2 cups of frozen corn)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
Instructions
Place chicken in the bottom of a slow cooker and add seasoning. Then add the rest of the ingredients except the cream cheese and cook on high for 4 to 6 hours. Add the cream cheese the last 30 minutes to melt, stirring periodically to blend. Remove the chicken and shred using two forks. Add shredded chicken back to the slow cooker and stir again making sure cheese is completely melted and blended into the chili.
