It doesn't get much more comforting than a warm bowl of creamy tomato soup and a crispy, melty grilled cheese sandwich. This soup is quick and easy to make and what kid doesn't love a grilled cheese sandwich. Perfect to whip together for those busy nights when you want something satisfying but fast.
Tomato Soup
Ingredients
1 28 oz can of whole peeled tomatoes
1 14.5 oz can of fire roasted tomatoes
1 cup chicken broth
1 small onion chopped or 1 cup chopped
2 tbsp salted butter
1/4 cup heavy cream
3 to 4 garlic cloves minced
1 bunch of fresh basil (around 2 tables chopped)
1 tbsp sugar
salt pepper to taste
Instructions
In a soup pot saute onions and garlic in butter until the onions are translucent. Add a pinch of salt and pepper. Drop in one bunch of basil leaves on the stem. Add tomatoes, chicken broth and one tablespoon of sugar. Cover the pot and cook for 20 minutes. Then blend soup by using a emersion blender or blending in batches in a blender. (that was a lot of blending) Finally add the cream. Top with some chiffonade of basil.
Ultimate Grilled Cheese Sandwich
Here is what you need: Good quality bread (I like to use sourdough), cheese (I use smoked gouda and sharp cheddar)
For the parmesan mayo spread it is a 2 to 1 ratio, 2 tbsp mayo to 1 tbsp grated parmesan cheese.
To assemble the sandwich spread the parmesan mayo mixture on each side of the bread. Place three pieces of the cheese of your choice in the center of sandwich. Cook in a skillet on low heat on one side of sandwich for about 2 to 3 minutes then flip to other side and cook for another 2 to 3 minutes.
