This gingerbread cookie recipe is the absolute best I have ever used! It is soft but holds up well for decorating and constructing houses if you so desire. I love gingerbread of any kind so naturally making cookies is a must in my home. It is so much fun to decorate gingerbread men or houses and this recipe works beautifully.
Gingerbread Cookie
Ingredients
2/3 cup canola oil
1/4 cup molasses
1 cup dark brown sugar
2 eggs
3 cups all-purpose flour
2 tsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground cloves
1 tsp baking soda
1/2 tsp salt
Instructions
Whisk together the flour, spices, soda and salt. Set aside. Using a mixer, mix the oil, molasses and brown sugar. Mix in the eggs, one at a time. Slowly stir in the flour mixture. The dough will be quite sticky. Dump it out onto a piece of plastic wrap and refrigerate for at least 2 hours or overnight. On a lightly floured surface, roll out dough 1/4 inch thick and cut out desired shape. Bake in a 350 degree oven for 8 to 10 minutes on a cookie sheet lined with parchment paper.
