Tater Tot Breakfast Casserole

This Tater Tot Breakfast Casserole is a great make ahead recipe! It is a winner for busy mornings, entertaining for the holidays and feeds a crowd. It's an easy, hearty, family favorite that will have kids and adults coming back for seconds.

Tater Tot Breakfast Casserole


32 oz. bag of frozen tater tots

8 to 10 eggs

1 pound of breakfast sausage

2 cups shredded cheddar cheese

2 cups milk

1/4 cup chopped onion

1/4 cup chopped green bell pepper

salt and pepper to taste


Cook sausage with onions and peppers until sausage is completely cooked through. Drain any grease from sausage and then place in a large mixing bowl. Add tater tots and cheese and mix together. Pour mixture into a greased 9x13 baking dish. In a separate bowl whisk eggs and milk together. Season eggs with salt and pepper. Pour egg mixture over tater tot mixture. Bake for 1 hour in a 350 degree oven or until egg in the center is completely cooked.
