Taco Lasagna is delicious seasoned beef and cheese layered between soft tortillas. It can be topped with lettuce, sour cream, and diced tomatoes, or simply eaten by itself. If you love tacos, you will definitely want to make this dish. This recipe is perfect for a crowd and will be a hit at the dinner table.
1 to 1/2 pounds of ground beef
1/2 cup diced onion
1/2 cup diced bell pepper
2 garlic cloves, minced
8 to 10 flour or corn tortillas
4 cups shredded cheddar cheese
1 cup sour cream
1 can enchilada sauce
1 (14 oz.) can tomatoes and green chilies
1 Tbsp taco seasoning salt and pepper to taste
In a large skillet cook the beef with onions, peppers, and garlic. Then add the tomatoes with green chilies, enchilada sauce, and sour cream. Cut tortillas in half and place in a greased 9 x 13 baking dish with the cut side along the edges of dish. Spread 1/3 of taco mixture over tortillas and then some cheese. Repeat making 2 layers of tortillas and ending with taco mixture and cheese on top. Bake in a 350 degree oven, uncovered, for 30 to 40 minutes until cheese is melted and everything is hot and bubbly.
