Sweet and Spicy Salmon Bowls
Ingredients
4 to 6 fresh salmon filets, skin on
2 cups finely shredded cabbage
1/4 cup roasted peanuts, chopped
2 to 3 green onions, sliced
Juice from 1 lime
salt and pepper
Peanut Sauce
1/4 cup creamy peanut butter
1 tbsp sesame oil
1 1/2 tbsp rice wine vinegar
2 tbsp soy sauce
1 garlic clove, minced
2 tbsp sweet chili sauce
2 tsp fresh ginger, grated
Instructions
Season each salmon filet with salt and pepper and place in a hot skillet with oil skin side down for 3 to 5 minutes. Flip and cook for a couple minutes on flesh side until fish is cooked all the way through. Place in bowl with white or brown rice. Squeeze lime juice over cabbage with a pinch of salt and pepper. Stir until all cabbage is coated. Place cabbage in bowl along with salmon and rice. To make peanut sauce, combine all the ingredients and stir. Water can be added to thin sauce if desired. Pour sauce over salmon. Top with peanuts and green onions.
