Sunshine Cake is an easy cake that starts with a boxed cake mix, mandarin oranges, and crushed pineapple. It's simple sunshine in a cake! This really is an amazing cake for spring and summer. The flavors are bright and fresh and the whipped cream topping gives it a light taste. This cake has a lot of different names but I like the name Sunshine Cake the best! It does need to be stored in the refrigerator because of the whipped topping.
Sunshine Cake
Ingredients
One yellow cake mix
15 oz can of mandarin oranges
4 eggs
For topping
20 oz can of crushed pineapple
one box of vanilla instant pudding
8 oz container of cool whip
Instructions
Mix together cake mix, juice from the canned oranges, and eggs. Once everything is blended nicely add the oranges and mix gently to keep the oranges from breaking apart. Pour batter into a 9 x 13 baking dish and bake for 30 minutes in a 350 degree oven. To make the topping mix together the pineapple and pudding until well combined. Fold in the whipped topping. Cover and refrigerate until cake is completely cooled. Once cake is cooled spread the topping over the cake. This cake must be stored in the refrigerator. For an even lighter cake with fewer calories use sugar free pudding and cake mix, and light whipped topping.
