Stuffed Cabbage Soup
Ingredients
1 pound ground beef
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped carrots
2 garlic cloves minced
3 to 4 cups chopped cabbage
1 tbsp olive oil
2 (14.5 oz.) cans diced tomatoes
1 (8 oz.) can tomato sauce
1/4 cup white rice
1 tsp dried thyme
1 tsp dried oregano
4 cups beef broth
salt and pepper to taste
Instructions
In a large soup pot cook celery, onions, carrots, and garlic in oil until onions are translucent. Add ground beef and cook until browned. Add the remaining ingredients and cook for 30 minutes or until cabbage and rice is tender.
