This Slow Cooker Pork Carnitas recipe is easy to make and perfect for those weeknight dinners! Pork Carnitas taste incredible in a warm tortilla topped with fresh pico de gallo, avocado, queso fresco, and a squeeze of lime. With just a few simple ingredients you can have some tender and flavorful Pork Carnitas.
Pork Carnitas
Ingredients
3 to 8 lb. pork roast, or shoulder (I used boneless pork loin)
the zest and juice of 1 orange
the zest and juice of 1 lime
1 onion
3 garlic cloves minced
1 chipotle pepper in adobo (optional)
1 tbsp olive oil
1 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp adobo seasoning blend
2 bay leaves
1 tsp salt
1 tsp pepper
Instructions
Season your pork with salt and pepper and then place in a hot skillet with some olive oil to get a good sear on each side of the meat. Then add the pork to a slow cooker and the rest of the ingredients. Cover and cook on high for 6 hours and low for 8 hours or until the pork is tender enough to shred with a fork. Timing will vary depending on the size of your pork. Serve in a warm corn or flour tortilla. Optional toppings fresh pico de gallo, sliced avocado, queso fresco cheese or shredded cheddar cheese, sour cream, and squeeze of a lime.
