Slow Cooker Mashed Potatoes

A great Thanksgiving Side Dish!

Mashed potatoes are that one side dish you can't go without for any special holiday dinner, and cooking them in a slow cooker saves you room on top of your stove and takes some of the last minute stress off. These slow cooker mashed potatoes are creamy and incredibly easy to make!


Ingredients

5 pounds of peeled and diced potatoes

1 1/2 cups chicken broth

1 stick of salted butter

1 tsp of salt

1/2 tsp black pepper

1/2 cup sour cream

1 1/2 cups milk or half and half


Instructions

Place peeled and diced potatoes in slow cooker. Pour chicken broth over potatoes and add 4 tbsp of butter on top. Cover and cook on high for 3 to 4 hours and low for 6 to 8 hours, until potatoes are fork tender and ready to mash. Add salt, pepper, sour cream. Gradually add milk that has been warmed in microwave. Mash with a potato masher or electric mixer until smooth and cream. Turn slow cooker on keep warm until ready to serve
