2 1/2 pound chuck roast

1/2 cup chopped onion

3 garlic cloves, minced

2 tbsp worcestershire sauce

2 cups beef broth

1 tsp dried thyme

1 tsp dried oregano

salt and pepper to taste

1 tbsp olive oil

2 tbsp corn starch

2 tbsp water

1/2 pound to 1 pound of egg noodles

Instructions

Season roast with salt and pepper and sear, on all sides, in a hot skillet with oil. Place seared roast in slow cooker and add thyme, oregano, onion, garlic, beef broth, and worcestershire sauce. Cover and cook on high for 4 to 6 hours or low for 6 to 8 hours or until beef is tender enough to shred. Remove any fat and shred beef using two forks. Combine corn starch and water and stir into shredded beef. Add egg noodles. Depending on how many you use, you may need to add some additional water. Cover and cook for additional 10 minutes or until the noodles have absorbed liquid and are tender. Optional additions include, sliced mushrooms and frozen peas.
