This Sloppy Joe Cornbread Bake is the perfect weeknight all in one skillet meal. A delicious meaty sloppy joe topped with a sweet and cheesy cornbread will definitely hit the spot. It is such an easy and quick dinner to put on the table, and one that your whole family will love.
Sloppy Joe Cornbread Bake
Ingredients
Sloppy Joe mixture
1 pound ground beef
8 oz. can of tomato sauce
1/2 cup ketchup
2 Tbsp worchestershire sauce
1 Tbsp yellow mustard
2 Tbsp brown sugar
1 Tbsp apple cider vinegar
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 garlic cloves minced
1/2 tsp dried minced onion
1/2 tsp garlic powder
red pepper flakes (optional)
salt and pepper to taste
Cornbread mixture
1 box of Jiffy cornbread mix
1 can creamed corn
1/2 cup milk
2 eggs
2 cups shredded cheddar cheese
Instructions
In a large skillet cook the ground beef with onions, peppers, and garlic until completely cooked through. Add the rest of the ingredients. In a large bowl mix together the ingredients for the cornbread. Pour the cornbread mixture over the sloppy joe mixture and bake in a 375 degree oven for 25 to 30 minutes, until center is done and top is golden brown.
