Skinny Chicken Fajita Soup
Ingredients
1 1/2 pounds of chicken, boneless skinless breast, thighs, or tenderloins
2 15oz cans of black beans
2 15oz cans of fire roasted tomatoes
1 quart of chicken broth
2 bell peppers chopped
1 red onion chopped
3 garlic cloves minced
1 cup brown instant rice
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1/2 tsp ground turmeric (optional)
1 tsp salt
1/2 tsp black pepper
Instructions
Add oil to a soup pot and then add chicken (cut into bitesize pieces). Add onion, pepper, garlic, spices, salt, and pepper. Cook until chicken is done. Add the rest of the ingredients. Cover and allow to simmer for 20 minutes.
Optional toppings: sour cream, shredded cheese, sliced avocado, tortilla chips
