
Can you say Yum? I love this Cajun Chicken Alfredo that is all made in one skillet. If you like quick and easy meals then you will love this delicious recipe.
Skillet Cajun Chicken Alfredo
Ingredients
3 to 4 chicken breasts
1 tbsp cajun seasoning
1 tsp salt and pepper
half onion
half bell pepper
2 garlic cloves
pint of grape tomatoes
4 cups chicken broth
1 cup heavy cream
1 cup parmesan, romano, and asiago cheese blend
1 cup shredded gouda cheese
3/4 pound of pasta
Instructions
1. Cut chicken into bite size pieces and sprinkle in half cajun seasoning, salt, and pepper. Cook chicken in a skillet with one tbsp of olive oil until the chicken is cooked through. Once the chicken is done remove from the skillet.
2. Add the butter to the skillet and then the onions, peppers, and garlic and saute until they become softened.
3. Pour in the chicken broth, heavy cream, and the other half of the cajun seasoning and bring to a boil.
4. Add the pasta and stir frequently until the pasta absorbs most of the liquid and is tender.
5. Once the pasta is cooked add the cooked chicken and tomatoes and then begin adding the cheeses gradually.
6. Stir until the cheeses are completely melted and everything is creamy.
