The first time I had a Scotch Egg was in London and I couldn't believe how delicious they were. Pork sausage formed around a boiled egg, then breaded, and fried, is a common treat in the UK.
Scotch Eggs
Ingredients
6 boiled eggs (hard boiled or medium boiled)
1 pound pork breakfast sausage
1 Tbsp yellow mustard
1 Tbsp chopped chives or green onion
1 cup flour
1 tsp salt
1/2 tsp black pepper
2 eggs
2 Tbsp milk
2 to 3 cups panko bread crumbs (plain or seasoned)
Instructions
Combine sausage, mustard, and chopped chives and mix together. Divide the sausage mixture into 6 equal portions. Form each portion of sausage around each boiled egg. In a shallow bowl stir salt and pepper into flour. In a second shallow bowl whisk eggs and milk together. Place bread crumbs in a third shallow bowl. Roll each sausage coated egg into the flour, then the egg, and finally the bread crumbs. In a medium size pot or deep fryer, heat oil until reaches 350 degrees. Drop eggs one at a time into the hot oil and fry for 5 to 8 minutes, until sausage is completely cooked and they are golden brown.
