This Ritz Cracker Caramel Icebox Cake is a dreamy, creamy, no-bake, sweet and salty dessert! The first time I made this delicious cake I was shocked at how the crackers gave a delightful flaky crust between the creamy filling. You wouldn't know they were crackers if someone didn't tell you. This is a simple and fantastic dessert that your family will love!
Ritz Cracker Caramel Icebox Cake
Ingredients
1 cup sugar
16 oz. cream cheese, two blocks
3/4 cup heavy cream
pinch of salt
1/2 tsp vanilla extract
48 Ritz crackers
1/2 cup caramel sauce
optional whipped topping for top
Instructions
In a large bowl blend together cream cheese, sugar, salt, vanilla, and heavy cream until light and fluffy. Line the bottom of a 8x8 or 7x11 baking dish with crackers. Spread 1/3 of filling over crackers and then drizzle caramel sauce. Repeat crackers, filling, caramel sauce, ending with filling and caramel sauce. Top with whipped topping if desired. You can use container of cool whip or make your own.
