This authentic Red Beans and Rice recipe has all of the classic Cajun flavors that you know and love from the old-fashioned dish. Andouille sausage and smoked ham hock give the beans a rich, satisfying flavor. Serve each bowl with fluffy white rice and you will have a meal to warm your heart and soul. These beans are thick, zesty and delicious!
Red Beans and Rice
Ingredients
1 pound dry small red beans
1 ham hock (smoked pork neck bone)
1 Tbsp Cajun seasoning
1 tsp salt
1/2 tsp black pepper
1 pound Andouille sausage
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
2 garlic cloves, minced
1 tsp dried thyme
2 bay leaves
Instructions
Soak beans in a large soup pot overnight. Drain water and refill with fresh water, about 8 to 10 cups. Add ham hock, Cajun seasoning, salt, and pepper. Cook for 1 hour on medium high. In a large skillet cook onions, celery, peppers, garlic, and sausage, in 1 tablespoon of oil, until vegetables are tender. Add mixture to the beans. Then add dried thyme and bay leaves. Cover and cook for 2 more hours, until beans are slightly thick.
