Potato Gnocchi

Homemade Gnocchi is an Italian potato dumpling that is easy to make and taste great in your favorite Italian dishes. Serve it with melted butter and sage, pesto or your favorite marinara sauce for an easy meal idea. You can even make it ahead and freeze it in a single layer, then cook it when you need it.


Potato Gnocchi


Ingredients

2 medium potatoes

2 cups all-purpose flour

1 egg

pinch of salt


Instructions

1. Place the potatoes in a pot. Cover with water. Bring the water to a boil and cook until the potatoes are fork tender. Drain the water. Peel and mash the potatoes.

2. Remove about 1 to 1/2 cup of the mashed potatoes and place in a bowl or on a clean counter. Add the flour egg and pinch of salt. Knead until the mixture forms a ball. Cover the dough and let rest on counter for 30 minutes. Divide the ball into 4 equal portions. Roll each portion into long ropes on a floured surface. Cut into 1/2 inch slices. If desired, use the back of a fork and roll each piece of gnocchi off the tines, making groves.

3. Bring a large pot of salted water to a boil. Carefully place the gnocchi into the boiling water and cook until the gnocchi float to the top. Drain. Serve with your favorite marinara sauce, pesto, butter with sage or your favorite Italian dish.
