This easy, delicious Poppy Seed Chicken Casserole is a comfort food classic with tender chunks of chicken in a creamy sauce with a crunchy, buttery cracker topping. It's a family favorite in my house and it always devoured in minutes. This is definitely a winner - winner chicken dinner and a must try!
Poppy Seed Chicken Casserole
Ingredients
2 pound bag of frozen chicken (about 5 cups cooked chicken, cut into bite-size pieces)
2 cans cream of chicken soup
2 cups sour cream
3/4 cup grated Parmesan cheese
1 tbsp poppy seed
2 cups crushed butter crackers (Ritz)
1 stick butter
Instructions
Preheat oven to 350 degrees In a large bowl, stir together the soup, sour cream, and Parmesan cheese. Add the cooked chicken that has been cut into bite-size pieces (I shred the cooked chicken with my fingers) Mix everything together and pour into a 9 x 13 baking dish. Melt butter in a medium size bowl then add crushed crackers and poppy seeds. Stir until crackers are coated with butter. Sprinkle over the chicken in an even layer. Bake, uncovered for 30 minutes until hot and bubbling and crackers are golden brown. Serve by itself or over rice.
