This homemade Pimento Cheese is so delicious and very versatile. It's excellent simply on a cracker or a celery stick but can take a hamburger or pork chop to a whole new level. Maybe you have seen the orange tubs of stuff in the grocery store and have not been impressed but I can promise you this is nothing like that and you will be pleasantly surprised when you try this recipe. This recipe is so easy and only has a few ingredients, so I hope you give it a try!
Ingredients:
8 oz block of cream cheese
2 cups shredded sharp cheddar
2 cups shredded mild cheddar
1/2 cup mayonnaise
1 red bell pepper (or 4 oz jar of pimento peppers)
1/4 tsp black pepper
1/4 tsp garlic powder
1 tsp paprika
1 tsp minced onion
Instructions:
1. Blend cream cheese, cheddar cheeses, mayonnaise, and spices in a food processor. If you don't have a food processor you can do this by hand in a large mixing bowl.
2. Take a red bell pepper and place over a burner and allow to roast until completely charred all over the entire pepper. You can also place in your oven under the broiler, rotating the pepper until completely charred.
3. Place charred pepper in a bowl and cover with plastic wrap and allow to cool for 10 to 15 minutes. Then remove the skin and cut pepper into small dice size pieces.
4. Mix the pepper into the cheese and that's all there is to making this delicious spread.
