This one pan Pesto Chicken Bake is a sure-shot winner! It is easy and fun to make as you can use whatever veggies you like or have on hand. Such as potatoes, zucchini, broccoli, asparagus, onion, fresh green beans to name a few. One pan recipes are real best friends for any busy people out there.
Pesto Chicken Bake
Boneless Skinless Chicken Breast
potatoes (I used baby golden)
asparagus
onion
jar of pesto
mozzarella cheese (shredded, sliced, or fresh)
roma tomatoes
Instructions
Place chicken on a baking sheet tray and top with pesto, cheese, and sliced tomato. Toss vegetables with pesto salt and pepper. Spread vegetables on tray evenly. Bake in a 400 degree oven for 40 minutes or until chicken is completely cooked and veggies tender.
