There is something so comforting about a warm bowl of soup and this Minestrone is one of the best! Loaded with vegetables and flavor this soup will satisfy your taste buds and packs a punch of nutrients. Minestrone Soup
Ingredients
1 pound of Italian sausage
1 cup small shell pasta (or elbow macaroni)
1 quart size carton of chicken broth (4 cups)
2 (14 oz.) can diced tomatoes
1 (15 oz.) can of kidney beans
1 cup diced onion
1 cup diced celery
1 cup chopped carrot
2 garlic cloves, minced
1 med to large zucchini or 2 small
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried basil
salt and pepper to taste
Instructions
In a large soup pot cook sausage until browned. Add onion, celery, carrots, and garlic and cook with sausage until vegetables become tender. Then add tomatoes, beans, broth, and seasonings. Bring to a boil. Add pasta and then add zucchini that has been quartered and cut into small dice. Cook until pasta and vegetables are tender.
