Mexican Street Corn is a traditional Mexican food that's quick to make and addictive! This recipe is a must try for the summer and is perfect for a barbecue. It is super easy to make and fun to eat! If you like corn on the cob on the grill you are going to love this side dish recipe.
Mexican Street Corn
Ingredients
sweet corn on the cob shucked
crumbled queso fresco
cilantro
lime
1/2 tsp chili powder
1/2 tsp smoked paprika
for a little heat add some cayenne pepper
salted butter
2 heaping tbsp sour cream
1 tbsp mayonnaise
juice of half lime
Instructions
Place corn on an indoor or outdoor grill and cover with aluminum foil. You can also bake in a 450 degree oven for 20 minutes rotating corn after 10 minutes and also cover with foil. Once corn is cooked and has some char marks on each side remove and brush with melted salted butter. Mix together sour cream, mayo, and lime. Brush mixture over corn. Sprinkle with crumbled queso fresco and then chili powder and smoked paprika. Garnish with some cilantro leaves.
