This Mexican style cornbread adds an added flavor profile to an already delicious favorite! I love to make cornbread and especially when I have homemade chili or soup. You will want to try this because it is so moist, delicious, and so full of flavor.
Mexican Cornbread
Ingredients
! cup cornmeal
1/2 cup all purpose flour 1 cup buttermilk
1/2 tsp baking soda
1/2 tsp salt
2 tsp baking powder
2 Tbsp sugar
2 eggs
1 (14.5) can creamed corn
4 oz. or 1/2 cup chopped green chilies
2 Tbsp chopped green onion
1/4 cup chopped red bell pepper
1 cup shredded sharp cheddar cheese
2 Tbsp butter
Instructions
Preheat the oven to 375 degrees. In a large mixing bowl combine all the ingredients, except butter, and stir until completely mixed. Place butter in a 8 inch cast iron skillet or a 8 x 8 baking dish and place in the oven until butter is melted. Then pour batter into the skillet or baking dish and bake for 30 minutes or until golden brown or a inserted toothpick comes out clean.
