Mediterranean Chickpea Salad


2 (15 oz.) cans of chickpeas

1/2 cup red onion, chopped

1/2 cup cucumber, chopped

1/2 cup black olives (any olives will work)

4 oz. feta cheese, crumbled

zest of 1 lemon

3 tbsp lemon juice

1 tbsp honey

1 tbsp dried oregano

1/2 tsp salt

pinch of black pepper

3 tbsp olive oil

optional additions: chopped bell pepper, grape tomatoes, chopped celery, parmesan cheese, cheddar cheese.


Drain and rinse chickpeas. In a large bowl combine chickpeas, onions, cucumbers, black olives, and feta cheese. In a separate bowl combine lemon zest, lemon juice, honey, oregano, olive oil, salt, and pepper, and whisk. Pour dressing over chickpeas and vegetables. Refrigerate for up to 3 to 4 days.
