Meat and Potato Casserole



This is a simple, hearty, meal that can be made ahead of time. It is one of those meals that you can pull together quickly and feeds a crowd. You just can't go wrong with meat and cheesy potatoes!


Meat and Potato Casserole


Ingredients

1 pound ground beef

1/2 cup chopped onion

1/2 tsp garlic powder

1/2 tsp paprika

1/2 tsp dried thyme

1/2 tsp dried rosemary

salt and pepper to taste

4 cups thinly sliced potatoes (I use golden potatoes)

1 1/2 cups shredded cheddar cheese

1/4 cup milk

1 can cream of mushroom soup

1/2 cup beef broth


Instructions

Cook ground beef with onions and seasonings until ground beef is browned. In a bowl mix together soup, milk, and beef broth. Place half of thinly sliced potatoes on the bottom of a greased 7 x 11 baking dish. Pour half of the soup mixture over the potatoes, then add half the beef mixture, and half the cheese. Place the rest of the potatoes on top of the cheese, the rest of the soup, ground beef, and cheese. Cover with foil and bake in a 350 degree oven for 1 1/2 hour or until the potatoes are tender.
