Macaroni Salad

This Macaroni Salad is so good and creamy! Excellent to take to a cook out or summer time family gathering. Macaroni Salad is a classic American dish that is a staple on the picnic table. This recipe is my version and I hope you give it a try!


Macaroni Salad


Ingredients:

1 small box of elbow macaroni

1 to 2 cups of red, yellow, and green bell peppers

2 stalks of celery cut finely

1 cup of diced red onion

4 to 6 hard boiled eggs

2 cups mayonnaise

1/4 cup apple cider vinegar

1/4 cup sugar

1 tbsp yellow mustard

1/2 tsp salt

1/2 tsp black pepper

2 tbsp sweet pickle relish


Instructions:

Cook elbow macaroni according to the directions on the box. Drain cooked macaroni and rinse with cold water and then put in a large bowl and place in the refrigerator to cool. Cut onion, peppers, and celery into the size you prefer. I like mine cut very finely. Peel and cut hard boiled eggs. To make the dressing, mix together mayonnaise, mustard, vinegar, sugar, pickle relish, salt, and pepper. Pour over macaroni, hard boiled eggs, and vegetables. Mix everything until well combined. Note: I sometimes make a double batch of the dressing and add more just before serving to insure the salad is good and creamy. The macaroni absorbs the dressing and I have found once it sits in the refrigerator it can become dry.
