
There is no greater comfort food than a hearty stew. And Irish Beef Stew might be the king of them all! Guinness Beer gives the sauce an incredible rich, deep flavor, and the beef is fall-apart tender. This is the stew of your dreams!
Irish Beef Stew
Ingredients
2 1/2 pounds stew beef
2 slices of bacon
1 cup beef broth
1 can Guinness Beer
2 tbsp worchestershire sauce
1/2 pound carrots
1 onion diced
1 celery stalk
3 garlic cloves
1 parsnip
1 pound baby golden potatoes
3 tbsp corn starch
3 heaping tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves salt and pepper
Instructions
1. Cut bacon into pieces and fry in a skillet until crisp.
2. Season beef with salt and pepper. Remove bacon and begin to cook beef in bacon fat a couple minutes on each side. When you cook the beef make sure to leave space between pieces. 3. Remove beef and place in a slow cooker. Add corn starch, tomato paste, worchestershire sauce, herbs, and can of beer. Stir and then add garlic and vegetables that have been cut into bite size pieces.
4. Cook on high for 4 to 6 hours until beef is tender and vegetables are soft.
