3 cups milk
2 cups heavy cream (or half and half)
3 egg yolks
1/2 cup sugar
1 tsp vanilla extract
1 tsp nutmeg
pinch of salt
In a sauce pot whisk milk and sugar, heat until it begins to simmer. Remove from heat. Beat eggs, yolks ,salt, nutmeg, and vanilla until it becomes slightly frothy. Slowly pour hot milk into eggs, whisking constantly. Return and heat on medium low heat and whisk for about 5 minutes. Remove from heat and add heavy cream and stir well. Pour through a strainer. Refrigerate for several hours until completely chilled.
