Pasta
Ingredients
3 cups flour
4 eggs
1 tsp salt
2 to 3 tbsp. of water
Instructions
On a countertop or large bowl place the flour. Make a well in the center of the flour and add eggs and salt. Begin mixing eggs with a fork gradually adding a little of the flour at a time. Switch to your hands and begging to kneed the dough until it starts to come together. If the dough is dry you can add 1 tbsp of water by sprinkling over the dough as you kneed. It might take up to 3 tbsp of water depending on how dry the dough is. Once the dough has all come together and has formed a nice ball cover it with plastic wrap and let it sit for at least 30 minutes. If you are making the dough immediately then you can let the dough sit at room temperature. If you are making the dough the day before or several hours before than you can place it in the refrigerator. To make the pasta by hand, cut the dough into 4 pieces and take one of the pieces and begin rolling turning as you roll. Roll the dough as thin as possible. The thinner the better. Roll the dough up very gently to make a long rope and then slice. Unroll and toss in flour to keep from sticking and you should have long noodles. The width of the noodle varies depending on how thick you slice the dough. To cook the pasta, simply add pasta to salted boiling water and cook for around 2 to 5 minutes. The noodles do not take long to cook since they are fresh. The thicker the noodle the longer but 5 minutes is about the longest time to cook them.
