Creamy Italian Sausage and Tortellini Soup


1 pound Italian sausage

1 cup chopped onion

1 cup chopped celery

1 cup chopped carrots

3 garlic cloves, minced

1 Tbsp olive oil

1 tsp garlic powder

1 tsp dried oregano

1 tsp dried basil

1 tsp dried thyme

2 to 3 handfuls of fresh spinach

1 can diced tomatoes

1 pound of frozen cheese tortellini

4 oz. cream cheese

4 1/2 cups chicken broth

1 cup heavy cream

salt and pepper to taste


In a large soup pot cook onions, celery, and carrots until softened. Add sausage and garlic and cook until sausage is cooked through. Then add seasoning, canned tomatoes, broth, heavy cream, and cream cheese. Cook for 15 to 20 minutes until cheese is melted into soup and vegetables are tender. Add spinach and tortellini and cook for another 10 minutes until tortellini is done.
