Cream Cheese Stuffed Everything Chicken

This delicious dish combines the flavors of an everything bagel with roasted chicken. It is super easy to make and if perfect for a weeknight dinner. If you love a everything bagel with cream cheese then you will absolutely love this chicken. The chicken is moist and flavorful and the cream cheese gives it a fantastic twist.


Cream Cheese Everything Chicken


Ingredients

4 boneless skinless chicken breasts

4 to 6 tbsp cream cheese (1 to 1 1/2 tbsp for each chicken breast) (I use the onion and chive cream cheese spread for added flavor)

4 to 6 tbsp of flour (1 to 1 1/2 tbsp for each chicken breast)

2 to 3 eggs

salt and pepper (enough to season each piece of chicken)

everything bagel seasoning blend to make your own combine: 1 tbsp sesame seeds 1 tbsp poppy seeds 1 tbsp dried minced onion 1 tbsp dried minced garlic


Instructions

Butterfly each chicken breast by cutting the chicken lengthwise almost in half. You should be able to open the breast up like a book and lay it out flat. Season each piece with salt and pepper. Take 1 to 1 1/2 tbsp of cream cheese and spread on one side of open chicken breast. Fold chicken back together to close in the cream cheese. Place flour in a ziplock bag and then add chicken in bag and shake until coated. Dip floured chicken into beaten egg and then into roll in everything bagel seasoning. Fry chicken in a hot skillet with oil about 2 minutes on each side. This will ensure the seasoning adheres to the chicken and gives it a nice crust. Remove from skillet and place on greased baking tray. Bake in a 375 degree oven for 45 minutes or until chicken is cooked through. You can test if chicken is done by inserting an internal thermometer and it reaches 165 degrees. Serve with rice, noodles, or mashed potatoes.
