Tiramisu is one of my all time favorite desserts! This Classic Tiramisu is made from scratch but don't be intimidated, it's really easy. Spongy lady fingers soaked in coffee layered between a mascarpone cheese filling is incredibly delicious! This dessert is what dreams are made of!!
Classic Tiramisu
Ingredients
6 egg yolks
1 cup sugar
8 oz. mascarpone cheese
1 cup heavy cream
1/2 cup to 1 cup coffee
1 tbsp coffee liqueur
48 lady fingers
1/4 cup cocoa powder
Instructions
In a medium size bowl combine sugar with egg yolks and mix, using an electric mixer, until sugar is incorporated in with the yolks. Place bowl on a pot of simmering water, making sure the bottom of the bowl does not touch the water. Continue mixing for about 5 to 10 minutes, until mixture thickens and turns a pale yellow color. Remove from pot and immediately place in a larger bowl filled with ice. Continue to stir until mixture has cooled and thickened slightly more. Once cooled add mascarpone cheese and mix until smooth and creamy. In a separate bowl beat heavy cream until you have stiff peaks. Then fold the heavy cream into the cheese and egg mixture. Pour coffee liqueur into coffee and place in a shallow dish. Dip each lady finger into the coffee and then place into the bottom of a 9 x 13 baking dish. Once the entire bottom is lined with coffee soaked lady fingers, spread half of the filling over them. Top the filling with layer of coffee soaked lady fingers and top with the rest of the filling. Dust the entire top with cocoa powder. Cover and chill in refrigerator for 4 hours before serving. (You can also brush the coffee on each lady finger instead of dipping, however dipping will give more of soaked texture to the lady finger resulting in more coffee flavor.)
