Chocolate Covered Strawberry Truffles


1/4 cup heavy cream

1/4 cup melted butter

10 oz. bag of freeze dried strawberries

1/2 tsp vanilla extract

11 oz. bag of white chocolate chips

Dipping chocolate


In a large bowl combine white chocolate chips, heavy cream, butter, and vanilla. Microwave for 1 minute. Stir until smooth. Place strawberries in a food processer and pulse until they become a fine powder. Pour strawberry powder into white chocolate mixture. Stir until blended. Cover and place in refrigerator for an hour. Scoop mixture and roll into balls. Place balls on a tray lined with parchment paper, then put into freezer for 30 minutes. Melt dipping chocolate. Drop frozen balls into dipping chocolate and place back on parchment paper.
