Chicken Fajita Noodle Casserole


4 boneless skinless chicken breast, thinly sliced

1 tbsp olive oil

I fajita seasoning packet or 1 tsp each of onion powder, garlic powder, cumin, and paprika

2 cans of cream of chicken soup

1 (16 oz.) container of sour cream

2 cups shredded cheddar cheese

1 cup sliced onion

1 cup sliced bell pepper

2 garlic cloves, minced

12 oz egg noodles

Salt and pepper


Add oil to a large skillet and cook onions, peppers, and garlic until onions are translucent. Add seasoning and a couple pinches of salt and pepper to sliced chicken and stir until all chicken is coated. Add chicken to skillet with onions, peppers, and garlic and cook until chicken is done. Cook egg noodles in a large pot of boiling water until noodles are done. In a separate bowl combine soup, sour cream, and cheddar cheese except for 1/2 cup for top. Pour soup mixture into skillet with chicken and veggies and stir. Add egg noodles and stir until mixed well. Pour into a greased 9x 13 baking dish and sprinkle with remaining 1/2 cup of cheese. Bake in a 350 degree oven for 30 minutes until everything is hot and bubbly.
