Chicken and Dumplings is one of my families favorite meals and I have been making them for years. This delicious meal is so quick, easy, and comforting!
Chicken and Dumplings
Ingredients:
1 whole chicken
1/2 tsp onion powder
1/4 tsp poultry seasoning
1 tsp salt
2 tbsp butter
2 tbsp flour
1/2 cup chopped carrots
1/2 cup chopped onions
1/4 cup chopped celery
2 cups baking mix
milk (around 3/4 cup)
1/2 tsp dried thyme
1/2 tsp dried parsley
Instructions
1. Put chicken in a large pot and cover with water and add onion powder, poultry seasoning, and salt. Cook for 1 hour or until the chicken is tender. Save the cooking liquid from the chicken. (you can also use a rotisserie chicken)
2. Put butter into a large pot and then add the carrots, celery, and onion, and cook until they become tender. Sprinkle in flour and then add the cooking liquid from the chicken. Add the dried thyme, parsley, additional salt, and cracked black pepper. Cover pot and bring to a boil. If you feel you need more liquid you can add about 1 cup of canned chicken broth. Total amount of broth should equal around 6 cups.
3. Pour milk into the baking mix and stir until the mixture looks like biscuit dough. Drop spoonfuls of dough into the boiling broth, reduce heat to low, and cover the pot and cook for 15 minutes. Don't peek and uncover the pot until the 15 minutes are up.
4. Pull chicken from the bone while the dumplings are cooking.
5. After 15 minutes uncover the dumplings and add the chicken.
6. If you want the sauce to be thicker you can add 2 tbsp of corn starch to 2 tbsp of milk and add to the mixture.
