These Cheesy Spinach Muffins are so good for breakfast, a snack, lunch, or to have with dinner. I make them quite often and I put a couple in a ziplock bag and place them in the freezer, then when I need something quick I can pop them into the microwave for a minute and voila, breakfast!
Cheesy Spinach Muffins
Ingredients
1 1/2 cups almond flour
3 eggs
3/4 cups heavy cream (you can use half and half or milk)
1/4 cup grated parmesan cheese
1/4 cup feta crumbles (optional)
2 cups chopped spinach
2 tbsp olive oil
1 tbsp baking powder
1/4 tsp salt
1/4 tsp garlic powder
Instructions
1. Add all of the ingredients to a large bowl and whisk together until completely blended.
2. Fill each muffin cup, that has been sprayed with nonstick spray, about 2/3 of the way full with batter.
3. Bake in a preheated 350 degree oven for 20 to 25 minutes, until muffins are lightly browned and a toothpick inserted into the center of a muffin comes out clean.
4. Remove the muffins from the oven and let cool for 5 minutes before removing form the pan.
Keep in refrigerator for up to 1 week or in freezer for up to 6 months. Variations - Add 1/4 cup of finely diced ham or cooked bacon for an even more savory muffin.
