2 1/4 cups bread flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 1/2 tbsp olive oil
1 1/4 cups buttermilk (or whole milk with 1 tsp vinegar)
1 cup sun dried tomato, chopped
4 oz. mozzarella, cut into cubes
2 tbsp fresh basil, chopped
Combine flour, baking powder, baking soda, and salt into a large mixing bowl. Cut mozzarella into small cubes. Add mozzarella, sun dried tomatoes, and chopped basil to dry ingredients and gently stir. Add wet ingredients together then pour into flour mixture. Stir until well combined. Pour into a loaf pan. Bake in a 350 degree oven for 40 to 45 minutes until a toothpick inserted in the center comes out clean.
