Canadian Butter Tart


1/4 cup melted butter

1 cup brown sugar

2 eggs

1/3 cup corn syrup

2 Tbsp pure maple syrup

1/4 tsp salt

1 tsp vanilla extract

1 tsp lemon juice

2 premade pie crust


In a large bowl combine all the filling ingredients except the eggs and beat with an electric mixer until mixture is a light brown color. Add eggs and beat until slightly foamy. Roll out pie crust. Cut out circles using a cookie cutter. Press pie crust circles into muffin cups. Fill each crust with filling about three fourths of the way up. Bake in a 350 degree oven for 20 to 25 minutes. Allow to cool completely before eating. Store in the refrigerator.
