These buckwheat pancakes cook up fluffy as can be and are so delicious! They have a wonderful nutty taste and are packed full of nutrition. Buckwheat is a great gluten free option for pancakes and I know you will love these pancakes.
1/2 cup an all purpose gluten free flour (or a regular all purpose flour)
1 cup buckwheat flour
1 Tbsp baking powder
2 Tbsp sugar
1 1/2 cups milk
1 tsp apple cider vinegar
1 tsp vanilla extract
2 Tbsp melted butter
pinch of salt
Instructions In a medium size mixing bowl combine the dry ingredients. In a separate bowl combine the wet ingredients and then to the dry. Mix until well combined. Pour about 1/2 cup of pancake batter onto a hot griddle or skillet. Once you see bubbles around the edges and some in the middle flip over the pancake. Cook on second side until done in the middle. Serve with maple syrup and enjoy!
