This Beef and Barley Soup is rich, satisfying, comfort food in a bowl. A hearty and delicious soup, loaded with tender chunks of beef, fiber rich barley, and vegetables. This soup is so easy to make and will become your new winter favorite.
Beef and Barley Soup
Ingredients
1 pound of stew beef
1 cup quick cooking barley
3 tbsp tomato paste
1 cup chopped carrots
half large onion, chopped
2 to 3 celery stalks, chopped
2 garlic cloves, minced
8 cups beef broth
1 tsp dried thyme
1 tsp dried rosemary
1 tbsp worcestershire sauce
1 tbsp soy sauce
2 tbsp olive oil
salt and pepper to taste
Instructions
Heat oil in a large soup pot and cook beef until seared on all sides, cooking in small batches. Placed seared beef on a plate and set aside. Add vegetables and garlic and cook until onions become translucent and tender. Add tomato paste, broth, worcestershire sauce, soy sauce, and seasonings. Place beef back into pot. Cover and cook for 1 hour. Once the beef is tender add barley. You can also add some additional water if needed. Cook for 10 minutes or until barley is plump.
