Banana Oat Muffins
Ingredients
3 ripe bananas
1 egg
3/4 cup sugar
1/4 cup vegetable oil or applesauce
1/2 cup greek yogurt
1 1/2 cups all-purpose flour
1 cup oats
2 tsp baking powder
1/2 tsp baking soda
1/4 cup chopped walnuts
1 tsp cinnamon
pinch of salt
Crumb Topping
1/4 cup brown sugar
1/4 cup oats
2 Tbsp flour
1/4 tsp cinnamon
1 Tbsp melted butter
Instructions
Mash bananas in a mixing bowl. Add egg, sugar, oil, and yogurt, and stir to combine. Add the rest of the ingredients, stirring until completely combined. Pour batter into muffin cups lined with paper liners. To make the crumb topping, combine all the ingredients in a small bowl and stir until you have a crumb texture. Sprinkle topping over each muffin. Bake in a 375 degree oven for 20 minutes.
