This One Skillet Balsamic Chicken is so tender, juicy, and flavorful! This recipes makes a great dinner that is easy and quick. Sweet and tangy chicken topped with mozzarella cheese is a perfect duo!
One Skillet Balsamic Chicken
6 boneless skinless chicken thighs or 4 boneless skinless chicken breasts
1 pint of grape tomatoes
4 to 6 slices of mozzarella cheese
1 Tbsp olive oil
1/3 cup balsamic vinegar
2 Tbsp honey
1 Tbsp dijon mustard
1 tsp Italian seasoning
2 garlic cloves, minced
bunch of fresh basil
salt and pepper to taste
Season both side of chicken with salt and pepper. Heat oil in a large skillet and cook chicken a couple of minutes on each side. In a bowl combine balsamic vinegar, honey, mustard, Italian seasoning, and minced garlic. Pour mixture over chicken. Place a slice of cheese on top of each piece of chicken. Slice tomatoes in half and place around chicken. Add 2 Tbsp of chopped fresh basil over top of chicken. Place skillet in a 400 degree oven for 30 minutes or until chicken is cooked through. Serve with pasta or rice.
