Baked Apple Pie Enchiladas give you all the cinnamony goodness of hot apple pie stuffed into a tortilla. The fall season brings with it apple desserts and this one is favorite.
Apple Pie Enchiladas
Ingredients
8 to 10 flour tortillas
15 oz. can of apple pie filling
1 stick of butter
1 tsp cinnamon
1/2 cup water
1/2 cup brown sugar
1/2 cup white sugar
Instructions
Preheat oven to 350 degrees. Spoon about 1/4 cup of pie filling slightly off the center of each tortilla. Roll tortilla up and place seam side down in a greased 9x13 baking dish. In a medium saucepan bring butter, white sugar, brown sugar, water, and cinnamon to a boil. Boil for 3 minutes, stirring constantly. Pour sauce over enchiladas and let stand for 30 minutes. Bake for 20 to 30 minutes or until golden brown. Serve with vanilla ice cream, and drizzle with caramel sauce if desired.
