Smothered Pork Chops
Ingredients
4 to 6 boneless pork chops
1 cup all-purpose flour
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tbsp olive oil
2 tbsp butter
1 small onion
1 to 1 1/2 cups chicken broth
1/4 cup heavy cream
salt and pepper
Instructions
Season both sides of pork chops with salt and pepper. Mix together flour and seasonings. Dredge each pork chop into the flour mixture. Place floured pork chop into a hot skillet with 1 tbsp of olive oil. Cook about 4 minutes on each side or until golden brown. Remove chops from skillet and place on a plate. Add 1 tbsp of butter to the same skillet you fried your chops. Add an onion that has been sliced. Cook on low heat for around 10 to 12 minutes until the onion has a deep caramel color. Make sure you stir your onion often so they won't burn. Once onion is caramelized push to one side of skillet and add the other tbsp of butter. Then sprinkle in 1 tbsp of the same flour mixture you dredged chops into. Stir flour and butter together and cook for a minute. Then combine onion. Pour in chicken broth slowly stirring constantly. Adding a little broth at a time until you get the desired thickness of the gravy. Next add the heavy cream. Stir all together and then place chops back into the skillet with the gravy. Cook for additional 5 to 10 minutes to ensure chops are cooked through. Serve over rice, mashed potatoes, or noodles.
