Pumpkin Snickerdoodles, coated in sweet cinnamon sugar, are the perfect cookie for fall! These easy pumpkin cookies are so delicious and addicting. If you love classic snickerdoodle cookies then this pumpkin version is a must try.
Pumpkin Snickerdoodles
Ingredients
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1 tsp cream of tarter
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup white sugar
1/4 cup brown sugar
1 egg
1 stick of butter (1/2 cup)
1/4 cup pumpkin puree
1 tsp vanilla extract
1/2 cup white sugar (for rolling cookie dough in)
1 tbsp pumpkin pie spice
Instructions
In a large mixing bowl combine butter and sugars and blend until creamy. Add egg, vanilla, and pumpkin puree and mix. In a separate bowl combine all the dry ingredients and gently stir. Add dry ingredients to wet ingredients and mix well. Place dough in the refrigerator for 30 minutes to chill. In a small bowl mix 1/2 cup sugar with 1 tbsp of pumpkin pie spice. Drop spoonful of dough into sugar mixture and roll to coat. Roll dough into balls and place on baking sheet. Gently pat dough balls down slightly. Bake in a 350 degree oven for 10 to 12 minutes.
