This Loaded Cauliflower Casserole is the perfect side dish for any occasion and a great way to cut the carbs. Tender cauliflower that is creamy and cheesy topped with bacon and even more cheese will definitely bring them back for more. And you won't miss the potatoes with this dish!


Loaded Cauliflower Casserole


Ingredients

1 head of cauliflower (6 to 8 cups)

1/2 cup sour cream

1 (8 oz.) package of cream cheese

2 cups shredded Monterey Jack cheese

4 slices bacon, crumbled

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper


Instructions

Cut cauliflower florets into small bite size pieces and put them into a microwave safe bowl that has a lid. Add 1/3 to 1/2 cup of water to the cauliflower and cook in microwave for 4 to 6 minutes until fork tender, firm but not mushy. In a separate bowl combine sour cream, cream cheese, Monterey Jack cheese, and seasonings. Stir until smooth. Add steamed cauliflower to cheese mixture and stir until cauliflower is all coated. Pour into a greased baking dish. Bake uncovered in a 425 degree oven for 20 to 30 minutes.
