Chocolate Molten Lava Cake
Ingredients
1/2 cup butter
3.5 oz. semisweet chocolate
2 whole eggs
2 egg yolks
1/2 cup sugar
1 tsp vanilla extract
3 tbsp flour
3 tbsp cocoa powder
pinch of salt
Instructions
In a microwave safe bowl melt chocolate and butter together by microwaving for 1 minute and stir until smooth. In a separate bowl whisk eggs, yolks, and sugar until pale yellow color and foamy. Slowly pour melted chocolate mixture into the egg mixture stirring until completely combined. Add flour, cocoa powder, and salt and stir until smooth and combined. Lightly butter and dust with cocoa 6 small ramekins and then add batter about half way full. If you don't have ramekins you can use a muffin tin, just make sure you butter and dust with cocoa the same as you would the ramekins. Bake in a 425 degree oven for 10 minutes. The cakes won't look done but that is how they are supposed to be so the center will be ooey, gooey. Allow to cool for 10 minutes before flipping onto a plate, or you can eat out of ramekins also.
